My husband and I invested in a juicer today and we bought lots of produce from a local farmers market in Albany. The first juice blend we tried was prickly pear blend; very simple, so if you have a juicer, here goes!
1 prickly pear
1 lemon
1 wedge pineapple (really ripe so it adds sweetness)
just juice in that order, stir and enjoy!

4-5 red potatoes, washed and diced
3 tbsp butter
1/2 white or yellow onion, diced (or try 1 diced shallot)
salt & pepper
2 tsp paprika
1/2 cup cheddar cheese, shredded (you can use any cheese you prefer or have on hand)
preheat the oven to 350; melt the butter in a pan and fry the potatoes and onions over medium-high heat as you would to make home fries in an oven-safe skillet.
once tender, toss in the cheese and place in the oven to melt. fry an egg in a smaller skillet and then place on top of the potatoes during the last minute of cooking to finish off the cooking time for the egg (add one egg per person) and serve.

6 eggs (you can also use mostly egg whites like I did)
splash of milk
scant 1 cup Cubed cooked ham
scant 1 cup cheese (I used an aged sharp cheddar)
chives
salt & pepper
heat the oven to 350 degrees
melt 2 tbsp of butter in a skillet (safe for the oven) and cook the ham until slightly browned and heated through.
in a mixing bowl, whisk the eggs with salt & pepper and milk. pour into the heated skillet and let set. sprinkle the cheese evenly over top. place in the oven and cook until firm (about 10 minutes). cut and serve with chives scattered on top.

4 bananas, chopped into even pieces
2 tbsp butter
4 tbsp brown sugar
2 limes, juiced
1/4 c. coconut milk
heat a frying pan or a wok to medium-high heat. add butter to melt and the bananas. toss to fry until golden brown then add the brown sugar. heat until bubbling; place into a serving dishes and sprinkle even portions of lime juice and coconut milk and serve immediately.
